To Prep: put on dry rub overnight or in the morning in time for dinner, or add rub to salmon cubes and leave covered at room temperature in a time crunch. Air or pan fry.
For the Salmon:
- 1-2 lbs of salmon cubed
For the Marinade:
- 1 tbsp Garlic powder
- 1 tsp Pepper
- 1 ½ tsp Salt
- 1 ½ tsp Onion powder
- 1 tsp Teaspoon sugar / sub
- 1 ½ Teaspoon of PFY of choice pepper sauce
- ½ tsp hot pepper sauce to add a kick
- 2 tsp rice wine
- 1 /12 tsp mirin
For the Sauce:
- Mayo
- Sour cream
- 1 tsp pepper sauce
- 1 tsp dry rub
- 1/8 cup rice wine
- 1 ½ tbsp dried chives
- Parmesan cheese

Mix dry seasoning by hand until all salmon is coated
