Veggie Tacos

Ingredients:

  • soy-riso (try it, its delicious!)
  • firm tofu
  • two medium potatoes
  • half cup diced onions 
  • half cup diced bell peppers
  • tsp. taco seasoning
  • 2 tsp. PYF seasoning
  • dash of paprika
  • dash of cumin (maybe not this one)

Drain tofu and set aside on a paper towel to further drain. While waiting for tofu to drain, peel and cube potatoes, then dice your onions and bell peppers. Boil potatoes in a pot of water for 3 minutes on high heat. On the side, add two tablespoons of oil to a skillet over medium heat. Add potatoes to the skillet and begin to fry for two minutes. Then addd in peppers, soy-riso, tofu, and all spices. fry until potatoes are soft, then serve in flour tortillas with sour cream and/or pico de gallo.
